What you will need
2 Pounds Boneless Pork -- 2 inch cubes 1 Tablespoon Soy Sauce 1 Teaspoon Salt 1 Tablespoon Galanga -- finely chopped 1 Tablespoon Garlic -- finely chopped 1 Medium Onion -- chopped 1/2 Teaspoon Turmeric 2 Tablespoons Chilli Oil 1 Teaspoon Shrimp Paste 2 Teaspoons Chilli Flakes 2 Cups Water 1 Pound Cubed Pumpkin can use butternut squash How to cook it
Marinate pork with soy sauce and salt for 1 hour or long for better result. In a large saucepan, place pork and marinade, ginger, garlic, onion, turmeric, oil, shrimp paste, chilli flakes and 1 cup water. Mix well, Bring to boil. Cover and cook for 40 minutes. Add remaining water and pumpkin. Cook 15 minutes or until the pork is tender and most liquid evaporated. Serve warm over Khun Chai steamed rice.
